Ingredients

  • 2 eggs
  • 2 cups rice flour
  • 3/4 cup potato starch
  • 1/2 cup sugar
  • 3/4 cup lactose-free or plant-based milk
  • 1/3 cup sunflower seed oil
  • zest and juice of 1 lemon
  • baking powder
  • 2 apples

Steps

  • In a bowl, beat the eggs with the sugar for a few minutes until pale and fluffy.
    Add the rice flour and potato starch and mix.

  • Add the lactose-free milk and oil and beat with an electric mixer to obtain a light and smooth mixture without lumps.
    At this point, add the apple slices and baking powder and gently combine.

  • Pour the batter into a greased and floured cake pan and bake in a preheated oven at 350°F for about 40 minutes.
