The vegetarian flatbread is a mock crispy pizza, tasty, rich in vegetables, perfect for an aperitif. It can be prepared in a few minutes and is ready to be enjoyed. For this vegetarian flatbread, I chose to use red onions, peppers, eggplant, zucchini, and the essential mozzarella. But of course, you can choose the vegetables you prefer. The vegetarian flatbread is also excellent for a quick lunch, a delicious snack, or to satisfy your pizza craving when you don’t have time to wait for the dough to rise.

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup water
  • 1/2 tbsp extra virgin olive oil
  • 1/2 tsp salt
  • as needed mixed vegetables
  • 1.8 oz mozzarella for pizza (cut in julienne)

Steps

  • Cook the vegetables: in the dedicated article you will find all the quantities and cooking methods. In the bowl of the stand mixer, but you can also knead by hand, combine the flour, water, extra virgin olive oil, and salt. Knead for seven minutes until you get a nice smooth and homogeneous dough. Wrap it in cling film and let it rest at room temperature for fifteen minutes. Divide the dough into two equal parts. Dust the work surface with the fine semolina and roll out each piece of dough into a thin sheet using the rolling pin. Transfer the sheet to a baking tray lined with parchment paper, season with the vegetables and bake in a preheated oven at 410°F (210°C) for 10 minutes. Then add the mozzarella and continue cooking for another 2 minutes.
