Pantesca Salad – Sicilian Recipe

Pantesca salad, Sicilian potato salad, fresh and with a rich taste, is a typical salad from the island of Pantelleria, hence the name. The pantesca potato salad is a refreshing salad simply dressed but with genuine ingredients rich in flavors and aromas, with potatoes and cherry tomatoes, enriched with Tropea Red Onion, Island Capers, and Olives. It is a delight to serve not only on the hottest days of the year but also great as a year-round appetizer, perfect to accompany fish starters. Delicious when dressed with good EVO oil and the fragrant dried oregano from the Mediterranean scrub.

Pantesca Salad Ingredients

  • 2.2 lbs Potatoes
  • 10.5 oz Pachino Tomatoes
  • to taste black olives or Leccino olives
  • to taste Salted Capers
  • to taste Olive Oil
  • 1 Tropea Red Onion
  • to taste Oregano
  • to taste Salt

Pantesca Salad Preparation

  • Prepare the potatoes. Wash them and boil them with the skin on, covered with cold water, in a sufficiently large pot. Bring to a boil and cook for about 35-40 minutes depending on the size of the potatoes. I recommend not too large potatoes, in fact, if they are small, it’s better, and they should all be the same size so they cook evenly and quickly.

  • Drain the cooked potatoes, let them cool a bit, peel them while still warm, removing the skin without needing a knife. Let them cool completely.

  • Cut the potatoes and place them in a salad bowl, add the washed and halved Pachino tomatoes, add the thinly sliced Tropea red onion, and also add the capers, I always use the salted ones, which I wash well first, and then the black olives in brine or baked, or Leccino olives similar to Taggiasca, but in my opinion even better.

  • Dress the salad with olive oil, oregano, and salt, if you like, also some chili pepper. Mix and let cool well before serving.

  • Pantesca salad reminds me a lot of Greek salad, but obviously without feta, though similarly perfect as a single dish, there are potatoes that are so nutritious, but if we pair it with a good second course of meat or fish surely nothing else will be needed.
