Coffee mousse is a soft cream like a cloud that melts in your mouth, fresh and delicious made with only 3 ingredients, without cream and without milk!
It is made with just ice-cold water, sugar, and instant coffee. It all whips up with an electric mixer in a few minutes and becomes a cloud of cold coffee, perfect for summer
The magic is created thanks to the instant coffee which has surfactant properties that, together with the sugar and cold water, incorporate air during whipping, creating a stable and creamy foam.
You prepare it in 5 minutes, you have the WOW effect guaranteed, it refreshes you, is vegan, and is dairy-free.

- 1/2 cup cold water
- 1/4 cup brown sugar
- 2 1/2 tbsps instant coffee

Steps for making the coffee mousse
To prepare the delicious coffee mousse, pour all the ingredients into a bowl.
The water must be very cold, it is essential! With the electric whisks whip at medium-high speed for about 3-5 minutes, until the mixture becomes light, thick, and foamy like cappuccino-colored whipped cream.
Serve immediately in cups and if desired, you can sprinkle with some unsweetened cocoa powder.
Tips and Storage
Whip a double dose, put it in glasses and freeze. When you need it, take it out 10 minutes before, stir a little… and you have a ready homemade semifreddo.
If the foam has collapsed after a few hours in the fridge, you can briefly re-whip it with the whisks: it will be perfect again
The foam tends to deflate slowly, so it’s best to consume it within a few hours.
If you want to store it for longer, opt for the freezer.
