Instead of zabaione, it’s written zabaglione, at least in Piacenza, but it is more or less the same cream, always delicious, delightful, soft, and creamy. Steps Piacentine Zabaglione Ancient Recipe

  • Work the egg yolks and sugar with an electric whisk until they become frothy and almost white in color.

    Add the Marsala (16 half eggshells filled with liquor), I have given you the weight, mix with a hand whisk. Cook in a bain-marie, stirring continuously, being careful not to boil the liquid, until it swells, becoming thick and silky, serve in small cups
