For the preparation of the ice cream sandwich, you can use store-bought ice cream or make it at home, see recipe “Fior di Latte Ice Cream”.
I used Oro Sawia dry biscuits, but other types of rectangular biscuits are also fine.Proceed to assemble the sandwiches, place a nice spoonful of ice cream on a biscuit, level it well, and then cover with another biscuit, continue to fill the rest of the biscuits in the same way.
When they are ready, put them in the fridge for 5 minutes to firm up.Meanwhile, break the dark chocolate into pieces, put it in a small bowl, and melt it in the microwave at medium power for about 3 minutes, or in a bain-marie, keeping it hot.
Use ready-made hazelnut crumbs if you have them, otherwise, toast and then chop some hazelnuts.Take the ice cream sandwiches from the freezer, dip one part in the dark chocolate, place on a sheet of parchment paper, and then sprinkle with hazelnut crumbs, continue with the other ice cream sandwiches, dipping either a part or the whole sandwich.
Let everything rest in the freezer for at least 10 minutes and then serve.
