  • 1 zucchini
  • 5.3 oz spreadable cheese
  • 1 tbsp pickled capers
  • to taste fine salt
  • to taste extra virgin olive oil

Steps for preparing the summer zucchini rolls

To prepare the delicious summer zucchini rolls, start by washing the zucchinis under running water. Pat them dry with a paper towel and remove the ends.

  • Slice them thinly, but not too thin, about 0.08 inches, using a mandoline, heat up a grill pan or a non-stick skillet. Lightly grease it with oil (you can brush it on) and grill the zucchinis for 2-3 minutes per side until they are tender and have the characteristic grill marks. Lightly salt them.

    Once cooked, let them cool down, and in the meantime, prepare the spreadable cream.

    In a bowl, pour the spreadable cheese and the pickled capers, previously drained and chopped into small pieces. Adjust the salt, drizzle with extra virgin olive oil, and mix everything together.

  • Place a strip of zucchini on a cutting board and roll it onto itself forming a roll as shown in the picture.

    Fill a piping bag with the spreadable cream and generously fill the rolls.

    Decorate with sunflower seeds, flax seeds, and a fresh mint or basil leaf.

Storage and Tips

Store the summer zucchini rolls in an airtight container or covered with plastic wrap for up to 24-36 hours. The filling will maintain its creaminess, and the zucchinis won’t dry out.

Do not freeze them, the cheese loses its texture and the zucchinis become mushy and watery.

Choose young and straight zucchinis
They are easier to slice and do not have large seeds. Light or dark ones are fine, as long as they are firm.
