- 4 slices veal meat
- 1.76 oz soft breading
- 1.76 oz Prague cooked ham
- 4 slices Edammer cheese

Preparation for veal rolls with zucchini flowers in a pan
For the preparation of the rolls, start by making the soft breading with breadcrumbs, grated Grana cheese, salt, oil, basil or parsley, and minced garlic. I always have a supply ready, I prepare it in abundance and keep it in the fridge, find here how to make it based on the recipes.
Proceed with cleaning the zucchini flowers: remove the stem, pistil, and any bulges of each flower, then wash well under running water.On a cutting board, lay out the slices of veal meat, if they are thick, flatten them with a meat tenderizer, add a pinch of salt to each slice, also lay the opened zucchini flowers, a tablespoon of breading, a slice of ham, and the cheese, then roll everything well.
Wrap each roll again with another opened zucchini flower, then use kitchen twine to close the ends well.
Chop the onion and add it to a pan with olive oil, let it brown, then add the rolls, sear them over high heat on all sides with a few sage leaves, then deglaze with white wine, adjust the salt and cook them, turning them during cooking with the rest of the zucchini flowers. Continue for about 8 – 10 minutes.
At the end of cooking, remove the kitchen twine from the rolls, serve them both whole and sliced, accompanying them with the zucchini flowers, their cooking sauce, and fresh basil leaves.
