Those who know me and have been following me for a while know that anything leftover in my home is recycled and consumed without throwing away or wasting anything. Today I had a bit of leftover mashed potatoes, too little to make croquettes, so I added some other thin slices of potatoes and here is my good pie.
The Soft-Hearted Potato Pie is a delicious and tasty recipe, layers of potato slices with a soft and creamy heart of mashed potatoes and melted provola in the center.
A versatile dish to be served in slices as an appetizer, side dish, or light main course, your choice according to your needs. I served it for dinner as a main course.

Ingredients for Soft-Hearted Potato Pie
- 4 large potatoes
- 1 1/4 cups mashed potatoes
- 2 oz Cooked ham
- 1 oz Provola cheese
- 1 oz Smoked scamorza cheese
- 1 oz Grated Grana Padano cheese
- to taste Breadcrumbs
- to taste Salt
- to taste Olive oil

Preparation for Soft-Hearted Potato Pie
To prepare this recipe, start by peeling the potatoes, then slice them thinly with a mandoline or slicer, keeping in mind two potatoes for the base and the other two to cover the pie.
Take a baking dish, drizzle it with oil, sprinkle with breadcrumbs, and then start to distribute the slices of the first two potatoes, salting as you layer them and drizzling with extra virgin olive oil, then sprinkle with breadcrumbs and grated Grana.
Now pour the leftover mashed potatoes, about a small plate, into the center, add the provola and cooked ham cut into pieces.Cover the pie with the other two thinly sliced potatoes, continuing to salt and drizzle with oil, sprinkle the surface with breadcrumbs and grated Grana.
Bake the potato pie in a hot oven at 350°F (180°C) for about 30 minutes, covering initially with foil to cook the slices well, remove it almost at the end and allow the surface to brown nicely, perhaps turning on the grill for a few minutes.
Remove from the oven and let the pie cool a bit, then slice and serve.

For a larger pie, increase the ingredient quantities, and feel free to fill it with ingredients of your choice: mozzarella, speck, whatever you like the most!
