Steps for Preparing Beer Batter

For preparing beer batter, put the beer in the fridge at least 3 hours prior. It needs to be really cold to create the thermal shock in frying, making it super crispy

  • Sift the flour into a bowl (I use type 1 as it is less refined than type 00), this prevents the formation of lumps. Pour the beer, which can be either light or dark, slowly into the flour and gently mix with a whisk or a fork.

    Do not beat it too much, as the batter needs to incorporate air, not lose it. And if it stays slightly lumpy, even better.

    Add a pinch of salt, cover with cling film, and refrigerate for about half an hour.

    This step relaxes the gluten and increases the crispiness.

    How to use it

    Dip the dry ingredient into the batter, drain it slightly, and immerse it in the hot oil, which should be at 340 or 356 degrees Fahrenheit.

    Fry a few pieces at a time, so as not to lower the oil temperature, and once done, blot with paper towels.

Storage

The beer batter can be stored in the fridge for 24 hours in an airtight container or covered bowl.

Do not freeze as it loses consistency.
