It’s made with a few simple ingredients—flour, water, and potatoes—and in just a few minutes, then into the oven where the magic happens.
A crispy and tasty flatbread that goes crunch with every bite, and everyone goes crazy for it. In my house, we call it the faux focaccia without yeast.
It can become a savory snack, an appetizer, a side dish, or even a main course.
The potatoes are thinly sliced and then dipped in a batter seasoned with plenty of grated parmesan and rosemary.
The aroma that fills the kitchen while it cooks is reminiscent of the old days, when grandma would whip up something delicious with whatever was on hand.

- 4 medium-large potatoes
- 1 cup type 1 flour
- 1 cup water
- 2 tsp extra virgin olive oil
- 1 tsp fine salt
- 1 sprig rosemary
- to taste extra virgin olive oil
- 1/2 cup grated parmesan

Steps for Making the Potato Flatbread

Start by peeling them with a peeler.
Wash them thoroughly under running water and cut them into thin slices with a mandoline
In a bowl, pour the flour, water, salt, and a tablespoon of extra virgin olive oil and whisk until you get a homogeneous batter.
Then add the potatoes and mix with a spatula.
Line a baking tray 14×10 inches with parchment paper, lightly grease it with the EVO oil; this will prevent the flatbread from sticking and provide a crispy base. Pour the mixture on top.
Drizzle with a splash of oil and rosemary and bake at 390°F for 30 minutes in the air fryer mode. I used the very convenient multifunction oven, steam, and air fryer Cecotec BakeSteam 4000 combi, or in the static oven, at 390°F for 40 minutes, until golden.

Tips and Storage
You can add other spices like turmeric or aromatic herbs like rosemary.
It can be stored in the fridge for two to three days in an airtight container. Before serving, I recommend reheating it in the oven at 350°F for 5 minutes.
