Ingredients for Preparing Stuffed Zucchini with Tuna

  • 4 zucchini
  • 2 oz oz oil-packed tuna
  • 2.5 oz oz scamorza cheese
  • 2 tbsp breadcrumbs
  • as needed extra virgin olive oil
  • as needed fine salt

  • 1 Air Fryer

Steps for Preparing Tuna Stuffed Zucchini

Start by washing the zucchini under running water.

On a cutting board, cut them in half lengthwise and scoop them out with a teaspoon, keeping the pulp aside. Coarsely chop the pulp with a knife.

Chop the scamorza cheese with a chopper.

In a bowl, pour the chopped zucchini pulp, drained tuna, scamorza cheese, breadcrumbs, a pinch of salt, and a drizzle of extra virgin olive oil

Mix and blend everything together.

If baking in the oven, line a baking tray with parchment paper and place the zucchini side by side. If using an air fryer, place them in the basket in batches

Generously fill them with the help of a teaspoon and bake in the oven at 356°F for about 40 minutes, until golden brown, or in an air fryer at 356°F for about 20 minutes.

Storage and Tips

Store them in an airtight container in the fridge for two or three days. Before serving, reheat them in an air fryer: 320°F for 5-6 minutes

In the oven at 320°F for 10 minutes

You can freeze them for 2 months.
