Ingredients
- 1 eggplant
- 2 peppers
- 5.3 oz fregula sarda
- to taste chopped garlic and parsley
- 1 large ripe tomato diced
- 2 tablespoons pesto
- 3.5 oz shredded pizza mozzarella
Tools
- Air Fryer
- Casserole
- Bowl
- Spatula
Steps
Cook the vegetables in the air fryer for about 10 minutes at 392°F
Meanwhile, boil the fregula sarda in plenty of salted water for the time indicated on the package.
When the fregula is cooked, drain it into a bowl and let it cool with a drizzle of oil.
Add to the fregula the chopped garlic and parsley, diced tomatoes, pesto, and mozzarella and mix. Also add the vegetable pulp (in my case only eggplants).
Fill the vegetables with the seasoned fregula, spray a little oil on top, add some mozzarella, and gratin in the air fryer for 5 minutes.
Transfer to a serving plate and enjoy!!
♻️ Useful Variants:
• Add tuna or crumbled feta in the filling for a tastier note.
• Season the fregula with a tablespoon of tomato sauce before stuffing.
• Try them also with couscous or barley if you don’t have fregula available.
