How to make creamy scallops with mushrooms

Step-by-step instructions:

Let’s prepare the mushrooms

I used pre-sliced and ready mushrooms in a tray, very convenient and practical.

To prepare delicious scallops with mushrooms and cream, the first thing to do is to take care of the mushrooms. I used champignon mushrooms, but you can choose the variety you prefer, also based on your tastes.

To prepare the mushrooms, start by removing the earthy part of the stem and scraping away any soil residues with a knife. Then pat them dry with a damp cloth or rinse them quickly under running water if necessary. Dry them immediately to prevent them from absorbing too much water. Then cut them into slices.

In a pan, finely chop the cloves of garlic and sauté them together with extra virgin olive oil for a few minutes. Add the mushrooms and season with salt and pepper. After a few minutes, when the mushrooms release water, deglaze everything with white wine. Allow it to evaporate well and then cover with a lid, continuing to cook for a few minutes.

Let’s prepare the meat

Take the slices of veal and pound them with a meat tenderizer to make them thin and easier to cook. Dip them in all-purpose flour and brown them in a pan with extra virgin olive oil or butter. Add them to the mushrooms in the pan when they are golden on both sides. Continue cooking for a few minutes and add the cooking cream, stirring gently. Finally, garnish the dish with finely chopped parsley, if desired.

Serve the mushroom scallops when the dish is hot

If you have leftovers and want to reheat it, you need to reheat everything in the pan for a few minutes. If necessary, add a little cream to achieve a creamy sauce like the one prepared earlier.

Notes

Store in an airtight container in the refrigerator within 2 hours of preparation. The scallops with mushrooms can be stored in the refrigerator for up to 2-3 days.

To make the preparation lighter, you can use light cream. Alternatively, you can replace the cream with Philadelphia to achieve the same creamy consistency but with fewer calories. The final result will be a delicious and irresistible dish, hard to resist.
