- 2 eggs
- 14 oz 0% fat Greek yogurt
- 6 packets stevia or 2 tablespoons of whole cane sugar
- 1 pod vanilla
- 1.4 oz cornstarch
- 1 cup blueberries

Steps for Preparing the Protein Blueberry Cake

Start by washing the blueberries thoroughly under running water. Drain them and pat dry with a paper towel.
In a bowl, pour the Greek yogurt, vanilla or vanilla essence, eggs, and beat with a hand whisk until you get a homogeneous mixture.
Add the stevia.or 2 tablespoons of whole cane sugar, and the cornstarch. Continue mixing until the ingredients are perfectly combined.
Fold in the blueberries, leaving a handful aside
Combine and line a round 18 cm cake pan with parchment paper. Pour the mixture and add the remaining blueberries on top. Bake in the air fryer at 320°F for 35 minutes
After baking, let it rest for a few minutes and serve warm to fully enjoy the crunchiness of the crust and the creaminess of the melting cheese.
