- 2 eggs
- 1 oz stretched curd cheese

Steps for the Preparation of the Deconstructed Omelette
To prepare the delicious deconstructed vegetable omelette WATCH THE VIDEO RECIPE
Wash a medium-sized light zucchini under running water. Slice it thinly with a mandoline.
Take a non-stick pan d. 24 and cover it with julienne-cut stretched curd cheese, like galbanino, place the sliced zucchini on top until the entire surface is covered, and cook with the lid on and at low heat for 3-4 minutes.
Break two eggs at opposite sides of the omelette and cook for a few more minutes with the lid on until the whites are cooked and the yolk remains soft, for about another 3-4 minutes always at low heat. The cooking time varies depending on the thickness of the zucchini and the specific properties of your stovetop, so it’s impossible to estimate the exact time.
When you achieve the poached egg effect, turn off the stove and wait a minute. Then, with a kitchen spatula, fold the edges of the omelette to the center, as shown in the video, and sprinkle with chives.
And the deconstructed omelette is ready to be enjoyed!

The deconstructed omelette can be stored in the fridge for two days.
Before serving I recommend reheating it for two minutes in a pan with a light drizzle of oil.
