Thanks to the Parmesan that melts during cooking, forming a thin and crisp crust that crunches when you bite it, the quick and even browning achieved by the air fryer makes the asparagus as crispy as chips.

It’s ideal if you want something tasty without guilt.

Asparagus is rich in fiber, vitamins (especially K, C, and folates), and antioxidants, beneficial for digestion, immune system, and vascular health. Parmesan, while more caloric, provides high-quality proteins, calcium, and vitamin B12. Together, they offer a nutritious and balanced dish.

Ingredients for Preparing Crispy Asparagus

  • 1.1 lbs asparagus
  • 2.1 oz grated Parmesan
  • to taste fine salt
  • 1 drizzle extra virgin olive oil
  • to taste black sesame seeds

Steps for Preparing Crispy Asparagus

Thoroughly wash the asparagus under running water to remove any impurities.

Remove the woody end of the stalk: you can gently bend each asparagus and it will snap at the right spot naturally.

If the asparagus is very thick, you can lightly peel the stalks with a vegetable peeler to make them more tender during cooking.

Fill a pot with plenty of water and bring to a boil.

When the water is boiling, add the asparagus and cook for about 3-5 minutes. The time depends on the size of the vegetable. They should remain firm and not overcooked.

Drain them with a colander and immerse them in cold water to stop cooking.

Pat them dry with paper towels and arrange them in the basket of the air fryer lined with parchment paper.

Salt and cover them, except for the tips and stalks, with Parmesan and, if desired, with sesame seeds, I used black ones but white ones are fine too.

  • Cook in the air fryer for 8-10 minutes at 392°F if the asparagus is thick.

    If they are thinner, cook for 6-7 minutes at 392°F, until golden brown.

    After cooking, arrange on a serving dish, drizzle with a light drizzle of oil, and serve hot to enjoy all the crunchiness of the crust and… enjoy!

Storage and Tips

Choose fresh asparagus. The tips should be tightly closed, firm, and straight. If they are open or starting to fray, the asparagus is old. The stalk should be firm. They should have a uniform bright green color.

Select asparagus of similar thickness, so they cook evenly.

Store them in an airtight container in the fridge for two days. Before consuming, reheat them for a few minutes in the air fryer at 356°F to restore crispiness.
