Ingredients
- 6 oz Greek yogurt (also lactose-free)
- 1 Orange (medium)
- to taste Coriander (in seeds)
- to taste Parsley
- to taste Extra virgin olive oil
- 1 pinch Fine salt
- 1 pinch Black pepper
- to taste Rosemary
Preparation
Finely chop all the spices.
Grate the orange zest after washing it and squeeze its juice.
In a bowl, mix the yogurt with all the spices, the grated zest, 4 tablespoons of orange juice, the olive oil, pepper, and salt. Mix well and refrigerate, covered, to let the flavors meld for at least an hour.
An extra idea. If we have guests, set the table with washed and dried rosemary sprigs for each diner to use to brush the sauce onto the dishes.
