- 3 medium zucchinis
- 2 eggs
- 3 tablespoons flour
- to taste dried oregano
- to taste fine salt

Start by thoroughly washing the zucchinis under running water. Remove the outer part with a peeler and pat dry with paper towel. Then grate them with a grater and squeeze them energetically with your hands to eliminate all the excess water.
Place them in a bowl along with the eggs and beat with a fork. Then add the flour, salt, and oregano and mix until a homogeneous mixture is obtained.
Oil a non-stick pan d. 24 and heat. Pour half the mixture and cook covered for about 5 minutes over low heat. Fill with cheese and cooked ham and pour the remaining mixture and cook for another 5-6 minutes covered over low heat.
Then, with the help of a lid, or a plate, turn to the other side. Cook for another 5 minutes and the frittata is ready to be served!
Storage and Tips
Zucchinis must be squeezed very well so that the mixture does not remain watery.
Choose organic zucchinis if possible.
Store in the fridge for two days and before serving, reheat in a pan for a few minutes.
