The soft fruit tart is a variation of the classic tart. It stands out for its soft base, similar to a Sponge Cake.

This characteristic makes the dessert more delicate to the bite, without being too dry or crumbly. Additionally, it is much quicker to prepare as it does not require rising times and is lighter.

The soft fruit tart is filled with custard, which adds a creamy and delicious note to the dessert, balancing the lightness of the base. Its delicate flavor pairs perfectly with the freshness of the fruit, creating a perfect contrast between creaminess and juiciness.

Strawberries, sweet and juicy, give a sugary and spring-like flavor, as well as a vibrant color that makes the tart more inviting

The kiwi, with its slightly acidic note, balances the sweetness of the cream and the base, preventing the dessert from becoming cloying. Additionally, its bright green color creates a beautiful chromatic contrast with the strawberries.

Ideal to serve as a dessert at the end of a meal or to bring as a gift to lunches with friends and family.

The soft fruit tart is also great to enjoy as an afternoon snack.

Tips and Storage

Choose organic and Italian strawberries of a bright red color, without white or green parts.
They should be firm but not hard and without bruises.
With an intense and sweet aroma, a sign of optimal ripening.

Choose organic kiwis that are slightly soft to the touch (if too hard, they are not ripe). Without bruises or wrinkles, with a light fuzz.

Store the tart in the fridge wrapped in plastic wrap for three days.

You can freeze it in an airtight container cut into slices for three months
