RUM SHORTBREAD FILLED COOKIES

Rum shortbread filled cookies. Delicious treats, easy to prepare, with a light and crumbly shortbread base, flavored with rum. The cookies, half of which are holed in the center, once baked, can be filled with jam, the one I used was raspberry, or cream or Nutella, then paired and finally dusted with powdered sugar. Fragrant, so crumbly they melt in your mouth, in a word delicious.

The secret to a perfect result is refrigeration, the dough must be very cold. Adorable to give as a gift or to enjoy, these cookies are perfect at any time of the day, with tea or coffee, I can’t stop eating them, they’re so good.

Steps for rum shortbread filled cookies

  • In a bowl, mix the flour, starch, powdered sugar, and baking powder, add the cold butter in pieces and begin to knead. We thus obtain a sandy mixture, add the egg, the yolk, and the rum, knead until you get a dough, which we will wrap in cling film. Put in the fridge for about half an hour.

  • Once ready, roll out the shortbread on a floured work surface, about 1/5 inch thick. With the help of a cookie cutter, cut out discs, leave one whole, using a smaller cookie cutter, make a central hole in the other. Arrange the cookies on a baking sheet lined with parchment paper and bake at 350°F for about 12-13 minutes.
