Steps for the Preparation of the Stuffed Potato Cake

Choose organic or locally grown floury potatoes like yellow or red ones.

Wash them under running water with the skin on, and if they’re small, leave them whole. If they are large, cut them in half. Bring a pot full of water to a boil and add the potatoes and coarse salt, cooking for 30-40 minutes until done. Do the skewer test

  • After cooking, grease a round baking pan with a detachable bottom. Place three-quarters of the potatoes and mash them with a glass, as in the video, creating one-inch high edges.

  • Fill with slices of cooked ham and julienned scamorza or mozzarella cheese.

  • Cover with the remaining mashed potatoes using the potato masher, drizzle with extra virgin olive oil, and bake at 392°F for about 15-20 minutes until golden in a static oven. In an air fryer at 392°F for about 8 minutes.

    Remove from the oven and let it rest for 5 minutes. Serve it hot to enjoy the melted and crunchy effect, or lukewarm for a more compact result.
