Citrus Milk Cream Without Eggs

Citrus Milk Cream Without Eggs is a fresh, light cream with the citrus aroma of orange, lemon, and mandarin, these three citrus fruits are rich in vitamin C, of course, some is lost with cooking, but it remains a good healthy cream.

It is a soft and enveloping cream perfect to be enjoyed by the spoonful or to fill desserts like: cakes, pies, etc.

How many times have you complained that your kids don’t eat citrus fruits, so take advantage and prepare a nice cream for their snack, the recipe is very simple and if you have the Thermomix, it’s ready in 10 minutes!

Ingredients

  • 1 3/4 cups Citrus juice (oranges, lemons, mandarins, bergamot)
  • 1/2 cup Partially skimmed milk
  • 3/4 cup Sugar
  • 2/3 cup All-purpose flour (or cornstarch)
  • Butter
  • 1 Grated orange zest
  • 1 Grated lemon zest

Preparation

  • For the preparation of the cream, get some good organic citrus fruits, you will need 3 oranges, 4 mandarins, and half a lemon. Wash them well, dry them, grate the zest you need and then squeeze them with a citrus juicer you usually use, the liquid should be about 1 3/4 cups, this certainly depends on the size of the citrus fruits, add more if needed or less if not.

  • The citrus milk cream, without eggs, can be made with the Thermomix or in a pot by hand, with a whisk.

    Those who have the Thermomix know how it works from the recipe book, but since many do not own it, I also describe the stovetop version.

    Thermomix version: Put all the ingredients in the bowl, cook: 7/10 min. 194°F speed 4.

    Stovetop version: In a small pot, pour the starch or flour and mix it with the sugar, add part of the warm milk, turn on the gas and mix again, finally add all the milk, citrus juice, and grated zests. Raise the heat and continue to stir until it thickens.

  • Once cooked, add the butter, mix well, pour into a large bowl if used for fillings or in cups as a spoon dessert, cover with plastic wrap to cool in the fridge and serve with orange peel strips.
