FLUFFY PUFFED OMELETTE

Fluffy puffed omelette, today I propose an easy and quick recipe, these days I don’t have much time unfortunately, so I thought of a quick yet tasty recipe, fluffy with little fat, an alternative omelette baked in the oven, beating the egg whites until stiff and then incorporating them into the yolks, hence the puffed. This way you’ll have a delicious and soft puffed omelette, you will like it you’ll see and then it can be filled in different ways, instead of the speck I used in this recipe, you could use ham, bacon, or mortadella, combined with other soft cheeses, like gorgonzola…. so let your imagination run wild. Once tried you’ll make it several times, it can quickly solve the lunch or dinner problem very quickly and with much satisfaction, serve it with a fresh salad, enjoy your meal.

  • In a bowl with a hand whisk, beat the yolks with the flour, milk, salt, and pepper. Mix everything well, add the egg whites beaten until stiff, and mix from top to bottom.

    Pour the mixture into a baking pan lined with parchment paper, and bake in a preheated oven at 356°F for 15 minutes. Once ready, remove the pan, fill the top of the omelette with slices of speck and stracchino, bake for a few minutes, and your fluffy puffed omelette is ready, enjoy your meal.
