Golden Chicken Rolls with Vegetables

Ingredients for Golden Chicken Rolls with Vegetables

  • 3 slices Chicken Breast
  • 3.5 oz Seasoned Breadcrumbs
  • 1 Zucchini
  • 1 Carrot
  • 3 slices Cheese
  • to taste Olive Oil
  • to taste Salt
  • 1 Large Egg

Preparation for Golden Chicken Rolls with Vegetables

  • Clean the vegetables and cut them into julienne or thin slices with a mandolin.
    Prepare the seasoned bread mix for the breading with: breadcrumbs, grated Parmesan, garlic, salt, and parsley and place it in a container.
    Flatten the chicken slices with a meat tenderizer, sprinkle with some bread mix then lay half of the vegetables and the cheese, season and drizzle with a pinch of salt and a little oil, roll and close into a roll. Cut the vegetables that protrude from the sides.

  • In a separate bowl, beat the egg, dip the rolls turning them on all sides, then pass them in the bread mix, press to adhere the breading well.
    Once the rolls are ready, place them on a baking tray with parchment paper, add the remaining vegetables, drizzle with a little oil, and bake in the oven.

  • Bake in a preheated oven at 356°F for about 20/25 minutes, turning during cooking for a good even browning.
    Adjust based on your oven’s power and the size of the roll whether to remove earlier or continue cooking. They are ready when they are beautifully golden!
    Remove the rolls from the oven, slice them and serve with cooked vegetables and a small green salad… and enjoy your meal!
