- 2 1/2 cups all-purpose flour
- 2/5 cup sugar
- 7 tbsp butter
- zest of one lemon
- 2 eggs
- 1 1/2 cups apricot jam

Steps
To make the jam tart, start by preparing the shortcrust pastry: on a work surface, arrange the flour with the sugar and lemon zest. Add the butter cut into pieces and roughly mix with the dry ingredients.
Add the eggs and mix with the tips of your fingers until you obtain a homogeneous dough.
Wrap the shortcrust pastry in plastic wrap and keep it in the fridge for 30 minutes. After resting, roll out the pastry to a thickness of about 1/8 inch
