I recommend frying in peanut oil: it doesn’t smell and has a high smoke point, it is among the best oils for frying; the temperature is also very important: I advise you to bring the oil to 340-355 °F and use a kitchen thermometer. Fry a few rings at a time to avoid dropping the temperature too much.
If fresh calamari are not available or you cannot go to the fish market, you can opt for frozen calamari, already ready, just let them thaw in a colander under running water, dry them well and carefully, and proceed with the flouring and frying.
