Tagliatelle with Tomato and Basil Crudités

Tagliatelle with tomato and basil crudités is a summer main course that is prepared in 15 minutes. They are light, completely vegetarian, and perfect for unexpected guests. The dressing for our egg tagliatelle is made raw and consists of a tasty, fresh, and fragrant tomato sauce, not too ripe, fresh basil, and garlic. It is so delicious and aromatic that you will fall in love with it immediately. You can use either salad tomatoes or sauce tomatoes, as long as they are not too ripe, for taste and aroma reasons. Try it also in cold pasta salads, rice, couscous, and so on.

Ingredients

  • 9 oz salad tomatoes
  • to taste Fine salt
  • 1/3 oz Basil
  • 1 clove Garlic
  • to taste Extra virgin olive oil
  • 9 oz Tagliatelle

Preparation

  • 1) We bring the water for the tagliatelle to a boil (I used fresh egg ones that cook in just a few minutes)

    2) Wash the salad tomatoes well; they must be firm and fleshy. Cut them in half on a plate to capture their juice. Remove the seeds and then place them in a blender.

    3) Add the already washed basil to the tomatoes, the garlic clove without the inner sprout, and a pinch of fine salt. Blend the ingredients until you get a smooth and fluid kind of puree. Taste it and adjust the salt according to your preferences.

    4) If the sauce obtained is too liquid for your taste or needs – since some tomatoes can be more watery than others – just add the crumb of a slice of bread (even gluten-free) and blend it with the other ingredients; our crudités sauce will immediately become thicker and more substantial.

    5) The sauce is immediately ready to use; drain the tagliatelle al dente, season them with our tasty and fragrant crudités sauce, and complete the dish with a drizzle of extra virgin olive oil and a few more basil leaves. The leftover crudités sauce can be stored in the fridge, well closed, for about a couple of days.

    The extra idea: We can enhance the aroma and flavor of this delicious sauce by adding a pinch of freshly ground white pepper and some turmeric powder.
