Whole wheat summer sandwiches with basil cream are very tasty, light, and easy to make. We can always create different ones depending on the ingredients and our imagination. They are very useful when we don’t feel like turning on the stove; moreover, they are convenient to enjoy at the beach under the umbrella, by the pool, on a trip, or at work. The basil cream is quick, easy, very light, and fresh on the palate.

Ingredients
- 12 Slices of sandwich bread
- 11 oz Turkey breast
- 1 head Lettuce
- 1 Cucumber
- 7 oz Robiola cheese
- to taste Basil
Preparation
1) Prepare the basil cream. Wash the basil leaves and dry them by patting with a paper towel. Tear them into pieces and put them in a mixer with the robiola cheese. Blend until you get a creamy and homogeneous mixture. If you want a less dense cream, you can add a drizzle of extra virgin olive oil; salt it only if you think it’s necessary.
2) Wash and dry the lettuce leaves.
3) Wash the cucumber and slice it very thin.
4) Now assemble our sandwiches. Spread some basil cream on each slice of bread, add 2/3 lettuce leaves, cucumber slices, and turkey breast in the desired quantities. Continue until all ingredients are used up. They are ready to be enjoyed, or you can close them in a container and keep them in the fridge until it’s time to serve them.
If you need to take them with you, you can wrap them individually first in parchment paper and then in plastic wrap and keep them in a cool place.
