The chocolate and red berry chia pudding is a spoon dessert that combines the pleasure of a dessert with the benefits of a highly nutritious food. It is perfect for those looking for a healthy alternative to classic pudding, without sacrificing taste or aesthetics. This pudding is served in a glass with three layers: a creamy chocolate chia base, a layer of strawberry Greek yogurt, and finally red berries, for a colorful, fresh, and balanced result.
The main ingredient is the chia pudding, a preparation made from chia seeds, tiny but extremely rich in fiber, omega-3 fatty acids, proteins, and minerals. When in contact with a liquid – in this case, plant-based milk – the chia seeds absorb the moisture and swell, creating a natural gel around each seed. This process, known as gelatinization, requires at least 4 hours of rest (better overnight) and transforms a simple mix into a thick, pudding-like mixture without cooking.
In this version, the milk is enriched with unsweetened cocoa powder for an intense yet balanced chocolate base, sweetened with erythritol to keep it light.
Easy to prepare in advance and store in the refrigerator, it is also ideal for a summer breakfast or as a post-workout dessert.

Steps for Chocolate and Red Berry Chia Pudding:
For this recipe, we used frozen red berries, added them to a small pot, added a teaspoon of erythritol, and turned on the heat to the lowest setting. We stirred until the red berries softened and released their juice (3/4 minutes), then let them cool.
Alternatively, you can use fresh red berries, always seasoned with a little lemon and erythritol or another sweetener. In a bowl, combine the plant-based milk, chia seeds, cocoa powder, and erythritol. Stir well, let it rest for 10 minutes, then stir the mixture again, cover it with plastic wrap, and refrigerate for 4 hours or overnight.
The next day, divide the mixture into two transparent glasses, add half of the Greek yogurt to each glass, and finally, the red berries (half in each glass).
Decorate with a sprinkle of coconut flour and a mint leaf.
FAQ (Questions and Answers)
Can I use regular yogurt instead of strawberry Greek yogurt?
Yes! You can use any yogurt, even plain or plant-based. Greek yogurt makes the dessert denser and creamier.
How can I sweeten if I don’t want to use erythritol?
You can use honey, maple syrup, coconut sugar, or stevia, adjusting the quantities based on personal taste.
How long does the chia pudding keep in the fridge?
It keeps in a sealed container for 2-3 days. I recommend adding fresh fruit and coconut only when serving.
