Stockfish or Salt Cod Salad with Olives

Stockfish or salt cod salad with olives is a simple and quick dish that we often prepare in the south, especially during the Christmas period.

At my home, we prepare it like this with the stockfish flaked, simply seasoned, and served as a fish appetizer.
But it is a versatile dish and also perfect for a light and delicate main course accompanied by boiled potatoes.

Stockfish salad is a very quick recipe, just a few minutes of cooking time for the stockfish to flake, then it can be seasoned and served.

Stockfish and salt cod are essentially the same as they both originate from cod. The difference lies in the preservation method:
stockfish is dried and salt cod is salted.
Both are ready for use in the kitchen after a hydration and desalting process.
In Calabria, we use stockfish a lot because it is sold pre-soaked and ready to cook.

Ingredients for Stockfish or Salt Cod Salad

  • 25 oz Stockfish
  • to taste Black olives
  • to taste Olive oil
  • to taste Salt
  • 1 sprig Parsley
  • 1 Lemon

Preparation for Stockfish Salad

  • For this recipe, you can use either stockfish or salt cod, but the latter must first be cured and desalinated.
    Wash and cut the stockfish into pieces, place it in a pot with some water and a bit of salt, and cook for about 10 minutes, until it flakes.

  • Once cooked, drain, remove the skin and any bones, then flake the pieces and place them on a serving dish.
    Season with extra virgin olive oil, a pinch of salt, lemon slices, black olives, and finish with chopped fresh parsley. You can optionally add garlic or chopped chili pepper.


    Let it marinate a bit before serving.
