Cold Salad with Beans and Smoked Salmon

Hello! Today I’m sharing one of my favorite summer recipes: cold salad with beans and smoked salmon. It’s one of those dishes I make when I want something tasty but don’t have time (or the will!) to cook much. It’s quick, colorful, full of flavor, and perfect for hot days.
I started by grilling some zucchini, then let them cool down. Meanwhile, I took some already cooked borlotti and cannellini beans, put them in a bowl with yellow and red cherry tomatoes, plenty of fresh basil, the grilled zucchini, and the smoked salmon cut into strips. A nice drizzle of good extra virgin olive oil, and into the fridge until it’s time to serve. The result? A light and nutritious summer salad, perfect as a cold main dish or as an appetizing starter.

Steps

  • To prepare the cold salad with beans and smoked salmon, start with the zucchini: wash them and cut them into not-too-thin slices. Grill the zucchini on a non-stick grill pan and let them cool.

  • Meanwhile, in a salad bowl, place the cooked beans, halved yellow and red cherry tomatoes, basil, salmon cut into strips, and cold grilled zucchini. Season with salt and a generous drizzle of oil. Mix everything and keep it in the fridge until ready to serve.
