A nice drizzle of good extra virgin olive oil, and into the fridge until it’s time to serve. The result? A light and nutritious summer salad, perfect as a cold main dish or as an appetizing starter.

Steps
To prepare the cold salad with beans and smoked salmon, start with the zucchini: wash them and cut them into not-too-thin slices. Grill the zucchini on a non-stick grill pan and let them cool.
Meanwhile, in a salad bowl, place the cooked beans, halved yellow and red cherry tomatoes, basil, salmon cut into strips, and cold grilled zucchini. Season with salt and a generous drizzle of oil. Mix everything and keep it in the fridge until ready to serve.
