Homemade Ice Cream Sandwich

It’s an easy ice cream sandwich recipe that you can even make in the afternoon, maybe before a dinner with friends, or for a snack for your kids.
The base is very simple: beat the egg white until stiff, then whip the cream with sugar until it’s nice and frothy. At this point, gently combine the two mixtures, add a bit of vanilla extract for that irresistible aroma… and you’re done! The cream is ready to be spread between two cookies (I use classic ones like Digestive or Oro Saiwa, but others work too), then quickly roll them in chocolate chips. The result? A quick summer dessert that looks like it’s straight from a gelateria!
Put them in the freezer for 2-3 hours and voilà: you have creamy, delicious, and super refreshing ice cream sandwiches.

Steps
