Stockfish or Salted Codfish Fritters are delicious, tasty, and crispy fritters made with soaked stockfish or salted codfish, a classic regional recipe from Calabria. Being Calabrian, I often prepare this dish, especially as a Christmas appetizer, and my family loves it, even children enjoy it.
It’s a simple recipe made with a batter of cold water, flour, herbs, and pieces of soaked stockfish or salted codfish.
To make very tasty and delightful fritters, just fry them in hot oil in a pan. If you prefer a lighter but equally good version, you can bake them in the oven.

Ingredients for Stockfish or Salted Codfish Fritters
- 5 oz Stockfish or salted codfish
- 3/4 cup re-milled semolina flour
- 2/3 cup Cold water
- 1 oz Grated Grana Padano
- 1 bunch Parsley
- to taste Salt
- to taste Peanut oil

Preparation for Stockfish or Salted Codfish Fritters
Wash the fillets of soaked stockfish or salted codfish, remove the skin, and cut into small pieces, place in a bowl and add the grana, the clove of garlic and the chopped parsley, the cold water (carbonated is better), the salt and flour.
Mix and blend the ingredients well to form a soft, not too liquid or too dry mixture.
In a pan, pour the oil and bring it to the right temperature, drop spoonfuls of the mixture, flatten with the back of the spoon, and cook the fritters.Brown the fritters well, turn on both sides, and then drain on absorbent paper.

For oven-baked fritters: it’s better to add an extra tablespoon of flour to the mixture, drop spoonfuls, and bake in a hot oven at 356°F for about 10 minutes until golden, turning during cooking.
