Ingredients for the quick microwave apple cake
- 3/4 cup All-purpose flour
- 2 medium eggs
- 2 3/4 tbsp Brown sugar
- 1 teaspoon Baking powder
- 1 Grated lemon zest
- 2 3/4 tbsp Sunflower oil

Preparation for the quick microwave apple cake
I used two different colored apples just for the final decoration which I left with the peel.
Peel one and a half apples and cut them into cubes. Place them in a small bowl along with the brown sugar and lemon juice. Cook in the microwave for 2 minutes or in a saucepan over medium-low heat until the apple cubes are soft and cooked through.Meanwhile, in a Thermomix or a bowl by hand, pour in the flour, eggs, sugar, grated lemon zest, instant yeast, and sunflower oil. Turn on speed 3 and mix for over 1 minute, or quickly with a hand whisk. Add the apple cubes, mix, and combine everything well to form a homogeneous batter.
Take an 18 cm (7 inch) round baking dish, brush it well with oil or butter, pour in the batter, place the other half of the apple sliced thinly, alternate the apple colors for a different chromatic effect, and place in the microwave.
Cook the quick apple cake in the microwave setting the power to 800 W and cook for 3 minutes, check the cooking with a wooden stick, if it is very moist continue for another minute using the microwave-grill combo as well.Remove the cake from the oven, let it cool, gently detach it from the baking dish, and with the help of a lid, flip it onto a serving plate. Decorate the apple cake with powdered sugar, a mint leaf, and serve.
Tips:
if you don’t have a microwave, you can bake the cake in a traditional oven with fan setting at 350°F for about 20 – 25 minutes.
Of course, it won’t be express but normal baking!
