You can also add crushed nuts or sliced almonds on top. Ingredients for Limoncello Apple Cake without Butter

  • 4 Golden apples
  • 3 eggs
  • 120 sugar (about 1/2 cup)
  • 120 peanut oil (about 1/2 cup)
  • 50 water (about 1/4 cup)
  • 80 limoncello (about 1/3 cup)
  • 250 all-purpose flour (about 2 cups)
  • lemon zest (grated)
  • baking powder (1 packet)

  • 1 Stand mixer
  • 1 Pan – springform 9-10 inches

Steps

Preheat the oven to 356°F – butter and flour a 9-10 inch springform pan

  • Peel and slice the apples, then place them in a bowl with lemon juice to prevent oxidation.

    In a stand mixer, beat the eggs with sugar until the mixture is light and fluffy. Add the oil, water, limoncello, grated lemon zest, sifted flour, and baking powder. Continue mixing well.

  • Pour the mixture into the buttered and floured pan (a bundt pan can also be used). Arrange the apple slices in a circular pattern on top. Bake in the preheated oven at 356°F for 40 minutes. Check doneness with a toothpick.
