Spinach, Mozzarella, and Cherry Tomato Tart

The spinach, mozzarella, and cherry tomato tart is a quick, light, and delicious dish to prepare. It is made simply with eggs, fresh spinach, mozzarella (I used pizza mozzarella to prevent water formation), and cherry tomatoes. It can be served either as an appetizer or as a main course, accompanied by a vegetable side dish. Also, cooking it in an air fryer makes it even faster; otherwise, a preheated oven works just fine.

  • 1.75 oz cherry tomatoes
  • 1.5 oz pizza mozzarella
  • 1 egg
  • as needed breadcrumbs

Steps

To prepare the spinach, mozzarella, and cherry tomato tart…

  • First, place the spinach in a basin, rinse them under cold running water to remove any soil residue, and drain them well.

  • In a pan, pour the extra virgin olive oil and when it is hot, add the fresh spinach, a few tablespoons of water, and cover with a lid to wilt them.

  • Meanwhile, break the egg into a bowl, beat it with a fork, then add the pizza mozzarella cut into cubes, and the cherry tomatoes washed and chopped.

  • When the spinach is wilted, uncover the pan, let the water formed during cooking evaporate, drying them very well.

  • Transfer the spinach to the cutting board, chop them, then add them to the bowl with the egg, mozzarella, and cherry tomatoes. Salt, pepper, and mix everything.

  • Now take a cocotte, grease it, and sprinkle breadcrumbs on the bottom, pour the prepared mixture, and sprinkle some more breadcrumbs on top.

  • Place the cocotte in the air fryer basket and cook the tart at 356°F for 10 minutes.
