Ingredients
- 3 Sandwich rolls
- 7 oz Salted ricotta
- 10 Walnuts
- to taste Mixed lettuce
- to taste Extra virgin olive oil
- to taste Black pepper
- to taste Fine salt
- 14 oz Fresh fava beans
Preparation
1) Shell the walnuts and place them in the bowl of a hand blender. Add the fresh fava beans, a grind of black pepper, and enough extra virgin olive oil to obtain a smooth cream that can be easily spread. Blend the ingredients, spread it on the sandwich rolls, complete the filling with thin slices of salted ricotta, and lettuce leaves (already washed and dried) as desired. Salt the fava bean and walnut cream only if deemed necessary.
