Quick No-Bake Easter Dove Cake Pops

It might happen that children don’t like Easter dove cake as a dessert, but only chocolate eggs; or that you have a whole one or just a part left over. I propose a quick, easy, chic, and delicious idea to present it differently or recycle it, which will appeal to both children and adults: no-bake Easter dove cake pops. Cake pops are very tasty and decorative mini desserts, created out of the need to use leftover cakes and sweets in general. Besides being quick, they are also very easy to make and personalize according to our tastes, and we can serve them with coffee, tea, or at children’s parties. Generally, these decorated balls are skewered on sticks; however, I preferred to serve them in suitable cup liners.

Ingredients

  • 3.5 oz Easter dove cake
  • 3.5 oz Robiola cheese
  • 2 tbsp Milk (also vegetable or lactose-free)
  • as needed Colored sprinkles
  • as needed Chopped pistachios
  • as needed Chocolate chips

Preparation

  • For every 3.5 oz of Easter dove cake, with or without candied fruit and raisins, you can proceed as follows.

    1) Finely chop the dove cake, add the Robiola cheese (or any other firm and dry spreadable fresh cheese), the milk (which can be replaced with an equal amount of strong coffee, liqueur, etc.), chocolate chips as desired, and mix with electric beaters until you get a soft and homogeneous mixture.

    2) With your hands, take a quantity slightly smaller than a walnut, make it into a ball, and place it on a cutting board. Continue until the mixture is used up.

    3) In separate bowls, put the chopped pistachios and colored sprinkles (you can use chopped almonds, hazelnuts, chocolate sprinkles, etc.).

    4) Roll half of the cake pops in the chopped nuts and the other half in the sprinkles. Place each cake pop in a liner and, finally, let them rest for a few hours in the fridge to allow the flavors to meld. That’s it, the quick and easy Easter dove cake pops are ready.
