- 1 cup Fresh liquid cream
- 6.76 oz Liquid coffee
- 1/4 cup Sugar
- 1 tbsp Gelatin sheets
- 1.76 oz Dark chocolate
- 5 tbsp Liquid coffee

Preparation for the coffee and chocolate panna cotta
To prepare the coffee panna cotta, start by making coffee with the moka or with the electric espresso machine, whether in capsules, pods, or ground coffee, use a rather strong blend.
Meanwhile, soak the gelatin in very cold water.Pour the liquid cream into a small pot, add the sugar, bring to temperature until almost boiling, and add the liquid coffee.
Squeeze the soaked gelatin, add it to the cream, mix well, and then pour into 4 small molds.Allow the panna cotta to cool and set in the fridge for at least 3 hours. If you’re in a hurry, speed up the process by cooling it for about 30 minutes in the freezer.
Fifteen minutes before unmolding the panna cottas, prepare the coffee glaze:
melt the dark chocolate in a double boiler or microwave, add the 5 tablespoons of hot coffee and stir until you get a fluid but not watery sauce.Unmold the panna cottas by running a knife dipped in hot water around the edge of the mold without inserting the blade too deeply.
Dip the mold in boiling water for a second and then turn it over onto a serving plate. If the panna cotta struggles to come out of the mold, gently insert the knife blade to release the vacuum.Decorate the coffee panna cotta by pouring over the dark chocolate and coffee glaze, garnish with coffee beans or chocolate chips, and serve well chilled!
