Ingredients for the Pasta Salad with prosciutto and melon

  • 12.3 oz pasta (your preferred type)
  • 1 melon (about 1.76 lbs)
  • 3.5 oz prosciutto crudo
  • 7 oz primo sale cheese
  • 1 bunch arugula
  • to taste extra virgin olive oil
  • to taste salt

How to prepare Cold Pasta with prosciutto and melon

  • First, cook the pasta in plenty of salted water. I used radiators, but any pasta shape will do. Drain it al dente and rinse it under cold running water.

  • Drain it well and place it in a large bowl, drizzle it with a bit of oil and mix. This way it won’t stick together. Clean the melon: remove the two ends, the strings, and the seeds inside. Then remove the peel and use the special melon baller to form balls or simply cut it into cubes.

  • Now all you have to do is dress the Cold Pasta with the melon cubes, the prosciutto cut into small pieces, the arugula leaves, and finally the cheese cut into cubes. Add a drizzle of extra virgin olive oil, mix well, and store the Cold Pasta with melon and prosciutto in the fridge for at least an hour or until you are ready to serve it… simple, quick, but above all delicious!
