Preparation of Empty-the-Fridge Frittata Roll

  • Prepare the vegetables: Wash and peel the potatoes and carrots. Wash the zucchini. Grate all the vegetables finely. Place them in a bowl and squeeze them well to remove excess water.
    Prepare the mixture: In a bowl, beat the eggs with a fork. Add the grated vegetables, grated Parmesan, salt, and pepper. Mix well.
