Crispy and Light Zucchini Cutlets

Are you in the mood for something tasty but light? Zucchini cutlets are the perfect answer.

I often make them when I have fresh zucchinis in the fridge and want to prepare a quick and easy dish that everyone will love.

This recipe is really simple: grate the raw zucchinis, add breadcrumbs, some parmesan, an egg, and, to give a spicy and healthy touch, I also add a pinch of turmeric. Mix everything until you get a well-blended mixture, form small cutlets… and voilà!
One of the things I love about this recipe is that it’s super versatile: you can decide whether to fry the zucchini cutlets, bake them in the oven for a lighter version, or, as I often do, use the air fryer for a crunchy but lighter result. In any case, they always turn out delicious, golden on the outside and soft on the inside.
These vegetarian zucchini cutlets are perfect to serve as a main dish, perhaps accompanied by a fresh salad, yogurt sauce, or hummus.

They are also ideal for those looking for healthy zucchini recipes or alternative dishes to make even the little ones love (who often aren’t fans of vegetables!).
In short, with a few simple ingredients, you can bring a tasty and genuine dish to the table. And believe me, one leads to another!
