Ingredients for Pasta with Zucchini and Speck
- 14 oz trofie
- 4 cups zucchini
- 3.5 oz speck
- 3.5 oz cream cheese
- 1.4 oz grated Parmesan cheese
- to taste extra virgin olive oil
- to taste salt
- 1 clove garlic
How to Prepare Creamy Trofie with Zucchini
Wash the zucchini. Trim the ends and cut them into thin strips. You can simply slice them first and then cut into strips, or if you prefer, use a vegetable slicer or mandoline. Pour 2-3 tablespoons of extra virgin olive oil, a clove of garlic, and the zucchini into a pan.
While the zucchini cooks, also cook the trofie in plenty of salted water. Add the cream cheese and a few tablespoons of pasta cooking water to the pan with the zucchini.
Drain the pasta al dente and add it directly to the pan with the sauce. Add the grated Parmesan cheese and a pinch of pepper. Stir well, let it flavor over medium heat for a minute, and serve.
