Ingredients for Pasta with Zucchini and Speck

  • 14 oz trofie
  • 4 cups zucchini
  • 3.5 oz speck
  • 3.5 oz cream cheese
  • 1.4 oz grated Parmesan cheese
  • to taste extra virgin olive oil
  • to taste salt
  • 1 clove garlic

How to Prepare Creamy Trofie with Zucchini

  • Wash the zucchini. Trim the ends and cut them into thin strips. You can simply slice them first and then cut into strips, or if you prefer, use a vegetable slicer or mandoline. Pour 2-3 tablespoons of extra virgin olive oil, a clove of garlic, and the zucchini into a pan.

  • While the zucchini cooks, also cook the trofie in plenty of salted water. Add the cream cheese and a few tablespoons of pasta cooking water to the pan with the zucchini.

  • Drain the pasta al dente and add it directly to the pan with the sauce. Add the grated Parmesan cheese and a pinch of pepper. Stir well, let it flavor over medium heat for a minute, and serve.
