Chocolate Brioche Sticks

Chocolate Brioche Sticks are sweet, delicious treats.
They are soft sticks made with a brioche dough containing chocolate chips, then dipped in dark chocolate and sprinkled with crunchy sesame seeds.

It’s a leavened product that is ideal for breakfast, a snack, or any sweet break, both alone or dipped in milk or coffee.
If you want a crunchy effect to munch on, you can dry and extend the baking time of the sticks until they harden like breadsticks.

Ingredients for Chocolate Brioche Sticks

  • 2 cups All-purpose flour
  • 3 tbsps Sugar
  • 1/2 cup Milk
  • 1 Egg
  • 3 tbsps Butter
  • 1 tsp Fresh yeast
  • 1 pinch Salt
  • as needed Lemon or orange zest (grated)
  • 1/3 cup Dark chocolate chips
  • 3 1/2 oz Dark chocolate
  • as needed Sesame seeds

Preparation for Chocolate Brioche Sticks

  • In a bowl, dissolve the yeast in a splash of room-temperature milk, add the sugar, orange zest, and mix well.
    Add the beaten egg, the rest of the milk, and the sifted flour, knead and mix well.
    Finally, incorporate the softened butter, working vigorously; if you have a stand mixer, use it.
    Finish with a pinch of salt and the chocolate chips, continue kneading until you obtain a smooth, homogeneous, and firm dough.

  • Form a ball, cover, and let rest for about twenty minutes.
    After the resting time, roll out the dough with your hands to a thickness of about 3/4 inch.
    With a sharp knife, cut sticks about 1/2 inch thick.
    Make them any size you like.
    Gently round them and place them on a baking sheet lined with parchment paper and let them rise until they double in volume, about 1 hour.

  • Bake the brioche sticks in a pre-heated oven at 356°F for about 15 minutes. If you want some sticks crunchier, prolong the baking for another 20 minutes at 284°F.
    After the baking time, take them out and let them cool.
    Melt the dark chocolate in a saucepan over a double boiler or in a bowl in the microwave, dip the sticks halfway, sprinkle with sesame seeds, and allow them to set on a baking sheet with parchment paper.
    Once the chocolate has hardened, they are ready to enjoy.
