CARROT MEATBALLS carrots have never been so good

Crunchy and delicious Carrot Meatballs. If there’s one thing I never get tired of preparing and eating, it’s Meatballs of all kinds. I love making meatballs, from the classic Meatballs that everyone always loves to many different variations with fish, chicken, vegetables, potatoes, and ricotta. You can’t imagine how many types of meatballs you can prepare. In fact, I think that almost anything can be turned into meatballs. The recipe I want to tell you about today is for irresistible Potato and Carrot Meatballs so good that everyone loves them. Simple and perfect Vegetarian Meatballs to prepare that are great for getting everyone to eat carrots. Carrots are rich in minerals such as iron, calcium, magnesium, copper, and zinc. They are also rich in vitamins A, B, and C, with beta-carotene converted to Vitamin A by the body when needed. In addition to carrots, I’ve added potatoes, resulting in crunchy meatballs on the outside and with a soft heart. Ingredients for Potato and Carrot Meatballs

  • 7 oz carrots
  • 14 oz potatoes
  • 1.75 oz grated Parmesan cheese
  • 1 egg
  • 2.5 oz breadcrumbs
  • to taste salt
  • to taste extra virgin olive oil

How to Prepare Carrot Meatballs

  • Peel the potatoes and carrots. Wash them and cut them into small pieces

  • Plunge the potatoes into a pot of boiling salted water. After cooking for 10 minutes, add the carrots. Let them cook for another 15 minutes

  • Drain the vegetables. Transfer them to a bowl and mash them into a puree using a potato masher

  • Add the grated Parmesan cheese and an egg. Mix with a fork

  • Add 3-4 tablespoons of breadcrumbs and mix with a fork

  • Now form the Carrot Meatballs. Take a small amount of the mixture and roll it between your hands to form a ball

  • Coat it in breadcrumbs, making sure it sticks well on all sides

  • Prepare all the Carrot Meatballs in the same way until you finish the mixture, and place them side by side on a greased baking tray or lined with baking paper

  • Oil the Meatballs and bake them in a pre-heated static oven at 375°F for 16-18 minutes
    If you prefer, you can cook them in an air fryer at 375°F for 14-15 minutes

If there are leftover meatballs, store them in a container in the fridge for 1-2 days. You can also prepare them in advance and freeze them without cooking
