I really like yellow apples with a sweet flavor and Fuji with striped skin; for this recipe, I used the latter with their crunchy and juicy pulp.

- 1 roll Puff Pastry
- 2 Fuji Apples
- 4 Dry Amaretti
- 6 teaspoons Jam or Preserve
- 1 pinch Ground Cinnamon

Preparation of Pastry Tarts with Apples and Amaretti
Peel the apples, cut them in half, remove the core, and slice them lengthwise; you should obtain half-moon slices.
If you prefer, you can leave the skin on, but wash them well first.
Place them in a bowl, add the brown sugar and lemon juice, soften in the microwave for 2 minutes, or in a small pan on the stove.Roll out the puff pastry on the work surface and use cookie cutters to make 6 small discs, or 4 larger ones, depending on the size of your molds, I used these silicone ones it’s better if you make a double layer of pastry.
Transfer the discs to each mold, already buttered, covering the base and letting the dough protrude from the edges.Prick the bottom with a fork then sprinkle crumbled amaretti over each mold, leaving some for the final step, add a teaspoon of your favorite jam or preserve, and then arrange the apple slices to form a rose.
Finish with a sprinkle of crumbled dry amaretti, a handful of pine nuts, and then transfer the molds to the oven.You can also use metal molds, I made both, leaving the skin on for an extra touch of color.
Bake the pastry tarts with apples and amaretti in a preheated oven at 356°F for about 20 minutes. Adjust based on your oven’s power, whether to remove them earlier or extend the baking time. Remove the tarts from the oven when they are dry and golden.
Let them cool slightly before removing from the molds, dust with powdered sugar and serve.
