Tagliolini with Salmon and Béchamel

Tagliolini with Salmon and Béchamel is a delicate and refined first course, simple yet very tasty.
It’s a quick recipe made with fresh and smoked salmon, all made creamy by the béchamel.

It’s a dish that kids love too, and it’s perfect for important occasions like Christmas holidays.

The tagliolini can be served directly on the plate or, for a more elegant version, inside baskets made with grated parmesan.

A simple and quick idea for those who don’t have much time in the kitchen but still want to present a good tasty dish.

Ingredients for Tagliolini with Salmon and Béchamel

  • 5.3 oz Fresh Salmon
  • 2.5 oz Smoked Salmon
  • 2 tbsp Butter
  • 0.6 cup Béchamel
  • 2 tbsp Vodka or White Wine
  • 1 pinch Nutmeg
  • to taste Salt
  • 1 sprig Dill
  • 10.5 oz Tagliolini

Preparation for Tagliolini with Salmon and Béchamel

  • Clean the salmon from skin and bones and cut it into cubes. Slice the smoked salmon as well, leaving some aside for the final decoration. Take a pan, add the butter and fresh salmon, sauté for a few minutes, then add the vodka or wine and let it evaporate.

  • Add the smoked salmon, mix everything well, and cook for about 2 minutes.
    In the meantime, bring water to a boil in a pot for cooking the pasta.

  • Take the béchamel already prepared, or make it at home.
    Pour it into the pan with the salmon, season with nutmeg and a pinch of salt, and mix the ingredients well.

  • PARMESAN OR GRANA CHEESE BASKETS

  • Pour the pasta into the boiling water, salt, stir and cook as indicated on the package.
    If you want to serve it in a parmesan basket, use 6 tablespoons of grated cheese for each basket.
    Pour it onto a baking sheet with parchment paper and melt it, before it cools place it on a container to shape the basket.

  • Drain the pasta, transfer it to the sauce pan, and mix it carefully to flavor it well. 
    Serve immediately, garnish with some green sprigs and smoked salmon pieces.
