Grated Potatoes and Onion

There’s no need to make potatoes appetizing, I know! They are delicious even when simply boiled and dressed with oil and parsley. But I still recommend trying this simple tray of grated potatoes enriched with onion rings and cheese. Prepared this way, they are really mouth-watering. Get cooking and try them without hesitation also because they are easy to make. Simple but special! In short, a tasty dish that everyone agrees on.

Ingredients for the tray of grated potatoes

  • 1.76 lbs potatoes (weighed with skin)
  • 1 red onion (medium-small)
  • 2 tsp breadcrumbs
  • 0.7 oz Grana Padano cheese, grated (or Parmesan)
  • 2 leaves sage
  • 2 sprigs thyme
  • 0.7 oz butter
  • nutmeg
  • salt
  • black pepper

  • 1 Mandoline
  • 1 Baking dish

Preparation of grated potatoes

  • Wash the potatoes thoroughly, then boil them with their skins starting in cold salted water and counting 5 minutes from boiling.

  • Then drain them, let them cool slightly, peel and grate them with a large-holed grater.

  • Peel the onion and slice it into thin rings with a mandoline.

  • In a baking dish, melt the butter, then make a first layer with half of the grated potatoes and place half of the sliced onion on top.

  • Salt and pepper to taste, add a pinch of nutmeg, and distribute thyme leaves and sage strips cut with scissors here and there.

  • Then make another layer of potatoes, add the remaining onion, then again salt, pepper, nutmeg, thyme, and sage.

  • In a small bowl, mix the breadcrumbs with the grated cheese and sprinkle the surface of the tray with this mixture.

  • Bake the tray of grated potatoes and onion in a preheated static oven at 356°F for 10/12 minutes + a few minutes in grill mode until golden brown.

  • Remove the grated potatoes from the oven and let them cool slightly before serving. Enjoy! Paola
