Ingredients

  • 1 1/8 cup all-purpose flour
  • 1 cup Manitoba flour
  • 3/4 cup milk
  • 1 tsp cocoa powder
  • 1 tsp fresh yeast
  • 3 tbsp sugar
  • 1 tsp salt
  • 1 1/2 tbsp butter
  • 1 teaspoon orange paste
  • 1 1/2 oz melted dark chocolate
  • 1/3 cup chocolate chips

Steps

  • In the bowl of the stand mixer, add the flour with the crumbled yeast, then add the sugar and milk and start the machine. When the dough begins to come together, add the salt, melted chocolate, softened butter, and orange paste. Let the ingredients combine and work until a smooth dough forms, then add the chocolate chips and incorporate them into the dough. Transfer the dough into a bowl, cover it, and let it rise until doubled. It will take at least three hours, or maybe more, depending on the external temperature. After the resting time, transfer the dough to a work surface and divide it into 12 portions of 50 grams. Form balls and place them on a baking sheet lined with parchment paper. Let the buns rise until doubled (about an hour) and bake in a preheated oven at 340°F for 15 minutes.
